Stuffed calamari with salmon and prawns

Ingredients
- 4 small calamari
- 80g salmon
- 50g ricotta (Benna)
- 6 king prawns
- 1 egg
- small bunch basil
- 1 onion
- 3 cloves garlic
- 1 celery stick
- 1 medium potato
- 1/2 tsp nutmeg
- 1 knob butter
- 1 black courgette
- 1 large carrot
Method
Blend well the salmon and peeled prawns, in a bowl add with the egg, ricotta, basil, season and mix well. Use the prawn heads to make a stock with the onions, garlic and celery, saute all the ingredients together than add one litre of water and simmer for 45min. blend all the ingredients together and strain well. Stuff the cleaned calamari with the stuffing and use a toothpick to close it. Grill well on a griddle pan from all sides, than place in a small oven tray with the bisque made from the prawn heads cover and finish in the oven. Meanwhile boil and mash the potatoes with the basil, nutmeg and butter. Slice and grill the courgette and blanch the carrots to serve seasoned on the side.
