Spicy beef patty and Cheddar cheese wraps, with spicy chorizo tomato beans

Ingredients

For the beans

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 sticks celery, chopped
  • 100g diced chorizo sausage
  • 2 tbsp fajita seasoning (Discovery)
  • 1 tsp paprika
  • 1 x 400g tin chopped tomatoes (Mutti)
  • 1 tbsp black treacle
  • 1 x 400g tin cannellini beans (Bonduelle)

For the patties

  • ½ onion, chopped and fried
  • 600g minced beef
  • 1 tbsp fajita seasoning (Discovery)
  • 2 tbsp chopped fresh coriander
  • Fresh seasoning
  • 100g Cheddar cheese, cut into cubes
  • 2 tbsp olive oil for frying

You will also need

  • Large wraps (Discovery)
  • 2 red peppers, grilled
  • Few mixed salad leaves
  • 3 tbsp sour cream (Discovery)
  • Fresh coriander leaves

Method

Start this recipe with the beans. Heat the oil in a pan and fry together the onion and celery for 2 minutes. Add in the chorizo and continue to cook for a further 2 minutes for the chorizo to release its flavours. Next, add in the fajita seasoning, paprika, chopped tomatoes and treacle and cook on a low heat for 10-15 minutes. Finally, add in the beans and cook for a further few minutes. Meanwhile, prepare the patties by mixing together the cooked onion, minced beef, fajita seasoning and coriander together. Season well then divide into small balls. Stuff a piece of Cheddar cheese into each ball and flatten into a patty. Heat the olive oil in a pan fry the patties on both sides for 4 minutes, or until cooked through. To serve, spread a tablespoon of sour cream onto your wraps. Top with some salad leaves, followed by 2 or 3 patties. Cover with some grilled pepper slices and sprinkle over a few coriander leaves. Roll up tightly and place in a hot oven for just 3-4 minutes to warm the wrap through. Cut the wraps in half diagonally and serve with the spicy chorizo and tomato beans on the side.
