Spiced BBQ chicken taco salad

Ingredients

  • 2 chicken breasts
  • 1 BBQ flavoured oven bag (Maggi)
  • 1 red pepper, deseeded and diced
  • 100g tinned sweetcorn, drained
  • 2 tomatoes, deseeded and diced
  • 100g tinned black beans or kidney beans, drained and rinsed
  • ¼ onion, finely chopped
  • 1 jar spicy salsa (Santa Maria)
  • 150ml fresh cream
  • 2 limes
  • 1 bag spicy tortilla chips (Santa Maria)
  • 2 tbsp guacamole
  • 2 balls fresh mozzarella (Fior di Vita)

Method

Place the chicken breasts into the oven bag, add in the spice mix, seal and shake to coat the chicken. Place onto a baking tray and cook for 15-20 minutes. Meanwhile, make the taco salad. Mix the fresh cream with the juice of ½ lime to make the sour cream and pour half into a large bowl and place the remaining half in the fridge to chill. Add 2 tbsp salsa to the sour cream, along with the diced pepper, tomatoes, beans and onion. Season with salt and pepper and chill. When ready to serve,  mix ¾ of the tortilla chips with the bean salad and spoon into 2 deep bowls. Rip the mozzarella and place on top with a spoon of guacamole. Slice the cooked BBQ chicken and serve on top with extra tortilla chips and lime wedges.
