Shortbread squares with white chocolate ganache and berries
Serves: 14-16
Ingredients
For the sweet pastry
- 350g plain flour
- 175g butter
- 90g icing sugar
- 1 tsp baking powder
- 1 tsp vanilla essence
You will also need
- 200g white chocolate, melted
- 100g mascarpone cheese
- Fresh berries to decorate (raspberries or blueberries)
Method
Start this recipe by making the pastry using the rubbing in method. Bind together with the egg and use to line the base of a square cake tin. Prick all over with a fork and bake for 30 minutes at 200`c till golden brown. Remove from the oven and allow to cool down completely. Next, mix together the melted chocolate and cream cheese and spread evenly over the biscuit base. Immediately arrange the fresh berries over the top and place into the fridge for the white chocolate ganache to set. When ready, remove from the tin and cut up into squares.
