Sea food with yellow curry and mango salsa
Serves: 2
Ingredients
- 4 scallops
- 2 calamari
- 8 mussels
- 8 tiger prawns, tails on
- 1 sea bass fillet
For the yellow curry paste
- 1 fresh chilli
- Juice of 2 limes
- 1 tsp shrimp paste
- 1 tsp turmeric
- 2 lemon grass
- 1 tsp fresh ginger
- 2 cloves garlic
- 1 shallot
- Fresh coriander
- 1 tin coconut milk
- Spring onions
- Jasmine rice
- Salted peanuts
Method
Prepare a paste with the yellow curry paste ingredients. Pour the coconut milk in a wok and bring to the boil. Add enough curry paste to your liking and cook the seafood in the sauce. Serve accompanied with the rice, Sprinkled with coriander leaves, spring onions and crushed peanuts.
