Savoury French toast with maple glazed bacon

Ingredients

  • 2 thick slices of Sourdough bread (Maypole)
  • 2 eggs
  • 1 cup milk
  • ½ a teaspoon sugar
  • ½ a teaspoon ground turmeric
  • ½ a teaspoon mixed onion and garlic granules
  • 2 mushrooms, sliced and cooked
  • 2 sliced cheddar cheese
  • Oil for frying
  • 1 tomato
  • 3 streaky bacon rashers
  • 1 spoon maple syrup
  • Rocket leaves for serving

Method

Take a sharp knife and cut the bottom of the tomato so that it stands still, cut a cross on the top, drizzle with oil and roast in a hot oven until browned. Cook the bacon rashers under a grill with the maple syrup till crispy. Break the eggs into a mixing bowl and whisk together with the onion and garlic granules, sugar and turmeric. Whisk in the milk. Put a frying pan over a moderate heat with a thin layer of oil. Sandwich the bread with the cheese and mushrooms, dip in the egg batter and fry gently in the preheated pan until golden on both sides.

Serve the toast whilst still hot accompanied by the roast tomato, bacon rashers and salad leaves.
