Rolled moussaka with au gratin

Ingredients

  • 1 onion diced
  • 3 gloves garlic chopped
  • 1 tbsp. fresh rosemary chopped
  • 8 slices grilled aubergines (Emborg)
  • 2 tbsp. tomato concentrate
  • 1 tsp cumin powder
  • 400g lamb mince
  • 50g butter salted
  • 100g flour (Lamb brand)
  • 300ml warm milk heated with 2 bay leaves
  • 50g parmesan

Method

Sauté the onion and garlic in butter on a low heat then add the cumin and increase the heat to brown.  Add in the mince season and stir continuously to brown, followed by the tomato concentrate and rosemary and continue to cook till soft.  To make the sauce, melt the 50g of butter and mix in the flour well, add in the warmed milk gradually and  stir continuously on low heat till thick. Add in half of the parmesan to the béchamel, whisk well and remove off the heat. Roll the lamb mixture in the aubergine slices, place into an oven dish and cover with the cheese sauce. Sprinkle over the remaining cheese and grill until browned.
