Red velvet breakfast pancakes with strawberries and Greek yogurt
Serves:
Ingredients
- 240g plain flour
- 2 tbsp cocoa powder
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 250milk
- 1 tbsp white vinegar
- 100g caster sugar
- 2 eggs
- ½ tbsp red food colouring
- 1 tsp vanilla essence
- 80g butter, melted
- Fresh Greek yogurt, strawberries and honey for serving
Method
In a bowl, mix together the flour, cocoa, baking powder, bicarbonate and salt and put aside. In a mixing bowl, pour the milk and vinegar and allow to sit for 1 minute. Add in the caster sugar, eggs, food colouring, vanilla and melted butter and mix to incorporate. Slowly add in the flour mixture and mix till just combined. Butter a griddle pan and brush with a little oil or butter. Place on spoonfuls of the batter spaced well apart and cook quickly on both sides (it is important to not brown the pancakes) When ready, stack on a serving plate with layers of Greek yogurt, honey, strawberries or bananas in between.
