Quick smoked ham and vegetable tart

1 Rectangular sheet pre-rolled puff pastry
8 Eggs (Coccodi)
300 ml Milk
Salt and pepper to taste
1 tsp Dried oregano
1 tbsp Fresh chopped mint
4 Slices smoked ham, chopped
8-10 Frozen grilled aubergine slices (Orogel)
10 Cherry tomatoes, halved
75g Grated parmesan cheese (Zanetti)
2 tbsp Pine nuts
Method
Start by lining a greased oven dish with the pre-rolled puff pastry. Prick all over with a fork. Lay over the grilled defrosted aubergine, chopped ham and cherry tomatoes. Beat together the eggs, milk, oregano, chopped mint and season well with salt and pepper to taste. Mix in the grated Parmesan and pour the mixture over the base. Bake in the oven at 200c for 20-25 minutes or until cooked through. Serve either warm or at room temperature with a side salad.
