Method
Finely chop the onion and fry in a little olive oil for 5 minutes to soften. Transfer the onion to a large bowl, along with the mince, parsley, egg and season with salt and pepper. Bind together well, adding in a little of the breadcrumbs if too moist or sticky. Next, slice each gbejna into 3, form the meat into patties stuffing a slice of gbejna in each. Roll the patties in more breadcrumbs and shallow fry on both sides in a pan with oil till cooked through. Make up the mash and gravy and serve with the patties.

- 500g kkapuljat taċ-ċanga
- 1-2 bajdiet
- tursin frisk
- basla żgħira
- frak tal-ħobż
- melħ u bżar
- żejt taż-żebbuġa għall-qali
- pakkett instant potatoe mash
- pakkett bisto gravy mix
Method
Qatta’ l-basla b’mod fin u aqli fi ftit żejt taż-żebbuġa għal 5 minuti biex tirtab. Ittrasferixxi l-basla fi skutella kbira, flimkien mal-ikkapuljat, it-tursin, il-bajda u ħawwar bil-melħ u l-bżar. Għaqqad flimkien sew, u żid ftit frak tal-ħobż jekk ikun niedi wisq jew iwaħħal. Sussegwentement, aqsam kull ġbejna fi 3, ifforma l-laħam f’pulpetti u imla b’porzjon ta’ ġbejna f’kull waħda. Irrombla l-pulpetti f’aktar frak tal-ħobż u aqli ftit miż-żewġ naħat f’taġen biż-żejt sakemm isiru. Agħmel il-maxx u l-gravy u servi mal-pulpetti.
