Prawn and calamari cigars

Ingredients

For the prawn and calamari mix

  • 10 peeled king prawns
  • 1 whole calamari, cleaned
  • 1 tsp chopped chilli
  • 2 tsp grated fresh ginger
  • 1 tsp thyme leaves
  • 2 cloves garlic
  • 3 tbsp olive oil

For the dressing

  • 1/2 cup natural yogurt (Benna)
  • 1/2 squeezed lemon
  • 1 tbsp chopped parsley and mint
  • 2 chopped anchovy fillets
  • 1 tbsp olive oil

You will also need

  • 6 small wraps
  • 1/2 avocado
  • 4 spring onions
  • 6 sun-dried tomatoes (Ponti)
  • 8 chives
  • 2 tsp poppy seeds
  • 10 coriander leaves

Method

Cut the calamari in thin rings and mix all the ingredients together, cover and keep in the refrigerator for at least 2 hours. Toss in a well preheated pan until prawns are cooked through and remove from heat. To make the cigars, roughly chop the spring onion, chives and sun-dried tomato, dice the avocado and pick the coriander leaves, add to the prawn mix and toss in the poppy seeds too. Fill in the wraps and roll up tightly. Finally, make the dressing. Mix all the ingredients together and serve on the side in small bowls.
