Pork souvlaki with yogurt dressing and Greek goat cheese salad

Ingredients
For the pork
- 1 pork fillet
- Juice of 1 lemon
- 1 tsp dried oregano
- 3 crushed garlic cloves
- 4 tbsp. extra virgin olive oil (Borges)
- 1 large onion
- 2 green peppers
- Wooden kebab sticks
You will also need
- 1 small tub Greek yogurt (Kolios)
- Juice of 1 lemon

- 1 large tomato
- 1 red apple
- Handful black grapes
- Cucumber slices
- 1 packet goat’s cheese (Fior di Vita)
- Handful kalamata olives (FOS)
- Extra virgin olive oil
- Rock salt and cracked black pepper

Method
Trim any excess fat from the pork fillet and cut into 1 inch cubes. Marinade with the oregano, garlic, lemon juice and olive oil. Cut the onion and peppers into cubes and start making the skewers, alternating layers of meat and vegetables. Put the souvlakis in the fridge and allow marinade for a minimum of 2 hours. Meanwhile, make a dressing by simply whisking together the yogurt, lemon juice and olive oil and put aside. For the salad, cut the tomato and apple into wedges, cut the grapes in halves and mix together with the cucumber, olives, salt, pepper and olive oil. Crumble in the goat’s cheese. Grill the skewers and serve drizzled with the dressing and the salad on the side.
