Pistachio and almond cookies

Ingredients

180g ground pistachios (Lamb Brand)
180g ground almonds (Lamb Brand)
110g honey or maple syrup
2 tbsp melted coconut oil (SPA)
½ tsp almond extract (Lamb Brand)
Extra crushed pistachios to decorate

Method

Place the ground almonds and pistachios into a large bowl and mix in the almond extract, honey/maple syrup and coconut oil until the mixture forms and pastry. Cut into pieces and form into balls. Place onto lined baking sheets spaced apart, flatten slightly and stick in a few crushed pistachios. Bake in the oven at 180c for 12-14 minutes. Do not overcook the cookies will get firmer as they cool down.
