Pasta Salad with Maltese sausage yogurt sauce

Ingredients
- 2 Maltese sausages
- 1 tbsp. olive oil
- 2 tbsp. tomato paste
- 1 lemon
- 120g Greek yogurt
- 150g Penne/rigatoni (Maypole)
- Salt and pepper to taste
- 1 shallot, finely chopped
- 2 tbsp. chopped fresh parsley
- 1 carrot, peeled and grated
- 150g feta cheese, crumbled
- 1 handful baby spinach leaves
Method
Remove skin off the Maltese sausage and sauté the filling in a hot pan with the olive oil and tomato paste for 3-4 minutes to cook. Remove off the heat allow to cool down before blending with the yoghurt and the juice of half lemon. Boil the pasta till al dente`, cool in cold water and mix with the prepared yogurt sauce. Season well with salt and pepper, add in the shallot, parsley, carrot, feta and spinach leaves and mix together well.

Neħħi minn fuq in-nar u ħallih jiksaħ qabel ma tħallat miegħu l-jogurt u l-meraq ta’ nofs lumija. Għalli l-għaġin sakemm ikun al dente, berred f’ilma kiesaħ u ħawwad maz-zalza tal-jogurt ippreparata. Ħawwar sew bil-melħ u l-bżar, żid il-basla, it-tursin, il-karrotta, il-feta u l-ispinaċi u ħawwad sew flimkien.
