Pan-fried garlic chicken with lemon and thyme

Ingredients
- 2 chicken breasts
- Salt and pepper
- 25g garlic butter
- 1 lemon, grated
- 1 tbsp chopped fresh thyme
- 3-4 tbsp fresh breadcrumbs
- You will also need a side salad and potatoes for serving
Method
Start this recipe by heating up a pan with a little garlic butter. Season the chicken breasts on both sides with salt and pepper and pan-fry on both sides for 3-4 minutes to seal. Meanwhile, melt the remaining garlic butter and mix with the breadcrumbs, lemon zest and chopped thyme. Press this mixture onto the top of both chicken breasts, place on a baking tray and continue to cook in the oven for 5-7 minutes until cooked through. Serve the garlic chicken with a side salad and some potatoes.
