Oat bars with dried fruit and chocolate chips

Serves: 20

Ingredients

  • 125g butter
  • 100g light brown sugar
  • 2 tbsp honey
  • 1 tsp baking powder
  • 100g coconut
  • 1 egg, beaten
  • 160g dried fruits (papaya, apricots, raisins)
  • 160g oats
  • 150g chocolate chips

Method

Melt together the butter and honey in a saucepan. Place all the remaining ingredients in a large bowl and mix in the melted butter mixture. Press the mixture into a greased and lined baking tray and bake at 180`c for 15-20 minutes.
