Mini tortilla wrap quiche cups

Ingredients
- 8 eggs (Coccodi)
- 140ml single cream (Elmlea)
- 120g shredded 3 cheese mix (Emborg)
- Salt and pepper to taste
- Diced vegetables (Tomato, green pepper, red onion)
- 1 bag 6 plain tortilla wraps (Santa Maria)

Method
Grease a 12 hole muffin tin with oil. Cut discs out of your wraps approx. 10cm in diameter and squeeze into the holes. Whisk together the eggs and single cream in a bowl and season with salt and pepper. Carefully spoon the mixture into the tortilla cups and fill with the shredded cheese and diced vegetables. Place the muffin tins into the oven at 170`c and bake for 10-12 minutes. Be careful not to burn them. Can be served either hot or cold.
