Melon and mozzarella bites with Parma ham

Ingredients

  • 2 balls fresh mozzarella di bufala (Galbani)
  • 200g cantaloupe melon (Orange inside)
  • 200g honey melon (yellow/green inside)
  • 2 packets sliced Parma ham
  • Few fresh basil leaves to decorate
  • 1 tbsp. basil flavoured olive oil

Method

Start by slicing the melon into 1cm thick slices. Use a small round cutter and cut into discs. Slice the mozzarella and cut into the same sized discs. To put together, stack together layers of honey melon, mozzarella, cantaloupe melon. Wrap up a slice of Parma ham into a rose and place on top. Place on a small fresh basil leaf and chill before serving.
