Marinated Flank steak with chimichurri

Ingredients

  • 600g flank steak
  • 100ml olive oil (Borges)
  • Juice of 1 orange
  • Juice of 2 limes
  • 2 tbsp. soy sauce
  • 2 tbsp. Worcestershire sauce (Pinto’s Pride)
  • 2 tbsp. apple cider vinegar
  • 3 garlic cloves
  • Fresh ground salt and black pepper
  • 2 cooked jacket potatoes
  • 100g mushrooms, sautéed

For the Chimichurri salsa

  • 4 tbsp. chopped parsley
  • 4 tbsp. chopped fresh coriander
  • 1 shallot, finely diced
  • 3 garlic cloves, finely chopped
  • 1 small red chilli, finely chopped
  • 2 limes, squeezed
  • 2 tbsp. red wine vinegar
  • 100ml olive oil (Borges)

Method

Prepare a marinade by whisking together the olive oil, orange juice, juice of 2 limes, soy sauce, Worcestershire sauce, apple cider vinegar and garlic cloves. Sprinkle the steak with salt and pepper and dip in the prepared marinade and allow to sit for 2 hours. Meanwhile, prepare the chimichurri salsa by mixing all of the ingredients together and put aside. When ready, grill the steak to your liking and serve topped with chimichurri salsa, jacket potatoes and sautéed mushrooms.
