Mango and passion fruit chia seed and cashew nut puddings

Ingredients

For the chia seed layer

  • 400ml almond milk
  • 3 tbsp. chia seeds

For the cashew nut layer

  • 100g cashew nuts, soaked in water overnight (Lamb brand)
  • 125g frozen mango, defrosted (Asiago)
  • 2 tbsp. maple syrup
  • Zest and juice 2 limes
  • 1 tsp vanilla extract

You will also need

  • 2 tbsp. blueberries
  • 2 passion fruits
  • 1 tbsp. toasted oats (Lamb brand)

Method

Make the chic seed layer the night before by simply mixing together the chia seeds and milk and placing into the fridge to set. The next day, drain the water from the soaked cashew nuts and place into a liquidizer with the mango, lime juice and zest, maple syrup and vanilla and blitz together to a smooth paste. Spoon into the bottom of 6 jars and even out. Spoon over the chia seeds mixture and decorate the top with passion fruit pulp, blueberries and toasted oats.
