Maltese sausage and brie patties with a fresh rosemary salsa

Ingredients
For the patties
- 6 Maltese sausages, removed from casings
- 1 onion sliced
- 100g brie cheese
- 1 tsp fresh thyme
- 2 tbs mango chutney
- 1 tbsp red curry paste
- 2 eggs
- Flour to bind
- 2 baguettes
For the sauce
- 2 cloves Garlic
- 200ml salsa with peas (Vera)
- 2 tsp chopped fresh rosemary
- 3 tbsp olive oil
Method
Mix together the Maltese sausage, cheese, thyme, chutney- curry paste in a bowl, bind with flour and seal in a pan from both sides, put into an oven dish while you prepare sauce. On very low heat fry the garlic until lightly brown in olive oil, add the salsa and rosemary and simmer for 2 minutes. Pour the salsa on the patties and finish in the oven. Meanwhile remove the top part of the baguette and grill until nicely colored and serve patties with salsa on top.
