Maltese bread stuffed with tuna, olives and potatoes

Ingredients

  • 2 small round Maltese loaves
  • 3 potatoes, boiled and sliced
  • 100g black olives, stones removed
  • 2 large tins tuna, drained
  • 300ml tomato salsa
  • 4 fresh Gozitan cheeselets (Gbienet)
  • 2 large tomatoes, sliced
  • Freshly chopped basil and parsley
  • Chopped garlic

Method

Cut the top off the two loaves of bread, and remove the inside of the loaves, leaving just the crust. Place the bread that you have removed into a food processor, add some basil, parsley and chopped garlic and pulse till you have a nice herbed bread crumb mixture. You can now start filling the loaves by starting with a layer of sliced potatoes. Next, add a layer of tomato salsa and sliced tomatoes. Continue by adding a layer of tuna, followed by some black olives. Cover the olives with a layer of the herbed breadcrumbs. Repeat the whole process again, till the two loaves are completely filled and the last layer is the herbed breadcrumb mixture. Drizzle with some olive oil and wrap up the 2 loaves, in baking paper or foil. Bake for 20 minutes, at 180`c. Serve the stuffed Maltese bread either hot or cold.

  • 2 ħobżiet żgħar tal-Malti
  • 3 patatiet, mgħollija u mqattgħin roti
  • 100g żebbuġ iswed, bla għadma
  • 2 laned kbar (200g) tonn taż-żejt
  • 300ml zalza tat-tadam
  • 4 ġbejniet friski
  • 2 tadamiet kbar, Imqattgħin roti
  • ħabaq u tursin frisk
  • tewm imqatta’ rqiq

Method

Aqta’ l-biċċa ta’ fuq taż-żewġ ħobżiet u ħaffer il-qalba tagħhom biex tibqa’ biss bil-qoxra. Itfa’ l-frak tal-qalba f’food processor u miegħu ħabbat il-ħwawar u t-tewm biex ikollok taħlita bil-frak tal-ħobż imħawwar. Ibda imla l-ħobż billi tpoġġi saff patata fil-qiegħ u mbagħad għatti l-patata b’saff zalza tat-tadam u bit-tadam imqatta’. Imbagħad, fuq it-tadam agħmel saff tonn taż-żejt u itfa’ ftit żebbuġ iswed. Ferrex il-frak tal-ħobż imħawwar u farrak ftit mill-ġbejniet. Irrepeti l-proċess sakemm timla ż-żewġ ħobżiet u l-aħħar saff ikun bil-frak tal-ħobż. Geżwirhom f’karta tal-fidda u aħmihom fil-forn f’temperatura ta’ 180oC għal 20 minuta. Tista’ sservihom sħan jew kesħin. għal 2 persuni
