Lemon and lime shortbread crumble

Ingredients

  • 270g plain flour 
  • 150g salted butter (Lakeland)
  • 75g caster sugar 
  • Zest 1 lemon and 1 lime 
  • 3 tbsp lime curd (Mackays)
  • 2 tbsp extra caster sugar to decorate

Method

Place the flour, butter and sugar together in a bowl with the zests and rub together to form a crumble. Remove 1/3 from the bowl and put aside. Add a little water to bind the remaining 2/3 and roll out into a 20cm circle. Place onto a lined baking tray and spread over the lime curd. Next, sprinkle over the reserved crumble and then the extra 2 tbsp sugar. Bake in the oven at 200`c for 25-30 minutes.
