Lemon and blueberry muffins

Ingredients

Dry ingredients
180g plain flour (Lamb brand)
40g rolled oats (Lamb brand)
1 tsp baking powder (Lamb brand)
½ tsp bicarbonate of soda (Lamb brand)
Good pinch salt
Finely grated zest 1 lemon
250g fresh blueberries (Reserve 50g to decorate)

Wet ingredients
125g Greek yogurt
85g apple sauce
2 eggs
1 tsp vanilla extract (Lamb brand)
170g honey or maple syrup

Method

Start this recipe by lining 12 hole muffin tin with paper cases. In 2 separate bowls, mix the dry ingredients in one, and whisk the wet ingredients into the other. Next, pour the wet ingredients into the dry ingredients and mix just until they come together. DO NOT OVER-MIX. Spoon the mixture into the prepared cases and top with the reserved 50g blueberries. Bake in the oven at 175`c for 18-22 minutes or until cooked through.
