Kangaroo fillet with a thyme infused chilli, strawberry drizzle
Serves: 2
Ingredients
- 400g kangaroo fillet
- 1 tbsp thyme
- 8 strawberries, quartered
- 1/2 glass Marsala wine
- 1/2 tsp chilli
- 2 cloves garlic
- 1 knob butter
- 12 fresh French beans
- 1 large potato
Method
In a well preheated pan sauté the fillet from all sides and remove from heat than finish in oven, meanwhile add the chopped garlic, butter, chilly and thyme into the pan and continue frying. Once garlic is browned add the quartered strawberries and toss until softened, add wine and reduce by half. Cut the beans in same length and blanch in boiling water, slice the potatoes in thick slices without removing the skin and sauté in a sauté pan than season and finish in oven.
