Grilled steak sandwiches with avocado and spicy mayo

Ingredients
For the beef
- 500g flank steak
- Salt and pepper
- 1 clove garlic, skin on
- Olive oil for frying (Costa D’oro)
You will also need
- 2 ripe avocados
- Juice of 2 limes
- 1 clove garlic, finely chopped
- 2 spring onions, chopped
- 1 tbsp chopped coriander leaves
- Salt and pepper
- 4 sliced thick Maltese bread
- 1 tub sour cream
- Few dashes tobacco sauce
Method
Start this recipe by rubbing the flank steak on both sides with salt, pepper and olive oil. Heat a large griddle pan and sear the steak on both sides. Continue to cook till medium or to your liking before removing from the pan and allowing to sit for a few minutes. Meanwhile, prepare the avocado by dicing the flesh of 1 avocado and mashing the other. Mix together with the lime juice, garlic, spring onion, coriander and season well with salt and pepper. Next, toast the Maltese bread and liberally spoon over the avocado mixture. Slice up the cooked and rested flank steak and lay on top of the bread. Mix together the sour cream with the tobacco sauce and serve on the side.
