Gluten-free pasta with oyster mushrooms and chicken livers
Serves: 2
Ingredients
- 200g gluten free past (Schar)
- 1 onion
- 2 cloves garlic, finely chopped
- 250g chicken livers
- 1 cup milk
- 100g diced pancetta
- 100g oyster mushrooms
- 2 tbsp balsamic vinegar
- 1 tot dry sherry
- ½ tsp dried oregano
- 1 small glass white wine
- 1 tin tomato pulp
- Butter
- Fresh seasoning
- Fresh chopped parsley
Method
Finely chop the onions and cook in a spoon with a knob of butter until translucent. Roughly chop the chicken livers, add to the pan together with the garlic, mushrooms and pancetta and fry for several minutes. Flame with the sherry, add wine and reduce. Stir in the tomatoes and herbs, season to taste and simmer gently for 30 minutes. Meanwhile cook your gluten free pasta according to the directions on the packet and serve the cooked pasta with the prepared sauce
