Gluten-free giant cookies
Serves:
Ingredients
- 125g butter, softened
- 75g light muscovado sugar
- 75g caster sugar
- 1 egg, beaten
- 1 tsp vanilla essence
- 160g gluten-free flour (Dr Schar Patisserie Mix C)
- ½ tsp gluten-free baking powder
- 200g gluten-free chocolate chips or other toppings of your choice
Method
In a large bowl, beat together the softened butter and sugars till light. Mix in the beaten egg and vanilla essence, followed by half of the chocolate chips, the gluten-free flour and the baking powder. You can use your hands at this stage if you want to. Divide the mixture into 8 pieces and place on baking sheets well spaced apart and flatten out. Sprinkle the remaining 100g of chocolate chips evenly on top of the cookies and press in. Bake in the oven at 180`c for 15-20 minutes, or until cooked through. Alternatively, you may use nuts or dried fruits instead of chocolate chips.
