Ginger beer cake

Ingredients

210g plain flour (Lamb brand)
180g caster sugar (Lamb brand)
200ml ginger beer (Grace– SPA)
75g vegetable oil (Borges)
3 eggs
2 tsp baking powder
2 tsp ground ginger
1 tsp ground cinnamon
To decorate
3 tbsp icing sugar (Lamb brand)
1-2 tbsp extra ginger beer
Preserved stem ginger to decorate

Method

Start by placing the wet ingredients into a jug and whisk together. Next in a large bowl, whisk together all the dry ingredients. Pour in the wet ingredients and whisk together well. Pour into a lined loaf tin and bake in the oven at 150`c for 1 hour / 1 hour 15 mins. Allow to cool down. Mix the icing sugar with the ginger beer and pour over. Decorate the top with chopped preserved stem ginger.
