Fruit and nut cake

Ingredients

800g Mixed Dried Fruit(Lamb brand)
200g Mixed Nuts chopped (Lamb brand)
240g Self-Raising Flour (Lamb brand)
240ml Orange Juice (Lamb brand)

Method

Place the mixed fruit in a bowl and add the orange juice.
Let it soak for at least 2 hours or overnight. The more you leave it, the more flavor it gets.
If you’re leaving it overnight, cover it and place it in the fridge. Let it cool down to room temperature before continuing.
Add the chopped nuts and mix well, followed by the flour.
Mix it well using a spatula making sure no lumps are formed, and transfer it to your cake tin (spring one) lined with greased baking paper.
Spread it evenly and flatten the surface.
Bake in a preheated 130°c oven for 2 hours. After almost the 2 hour mark, insert a skewer in the centre and make sure it comes out clean.
Let it cool completely before removing it from the tin.
This cake won’t rise as it is very rich in fruit, and a small portion goes a long way!
