Fresh artichokes with capers, onion and tuna flakes

Ingredients
- 2 fresh artichokes
- 10g capers
- 1 onion, chopped
- 1 clove garlic, chopped
- 100ml vegetable stock
- 100g tinned tuna
- 2 lemons
- 10g anchovies
- 50g green olives
Method
In a glass bowl mix the capers, lemon juice, olive oil, anchovies, chopped onion, garlic and tinned tuna flakes and put aside. For the artichokes, wash well with water then squeeze over the lemon juice. Fill with the tuna mixture and braise the filled artichoke in thick bottom pan with the vegetable stock for 20 minutes with the lid on the pan.
