Fillet of pork on apple and cinnamon rice

Ingredients

  • 400g pork fillet cut in 2 portions
  • ½ glass red wine
  • ½ glass beef stock
  • 50g parboiled rice (Eurico)
  • 1 small red apple diced
  • 50g raisins (Lamb brand)
  • 1 shallot chopped
  • ½ glass apple juice
  • ½ glass white wine
  • 1 glass chicken stock
  • 1 tbsp. cinnamon powder
  • 2 bayleaf
  • 2 crushed star anise
  • Small bunch coriander chopped
  • Small bunch rocket leaves
  • 2 knobs butter (Valio)

Method

Seal the pork on both sides and finish off cooking in the oven. Add the red wine to the same sauté pan and reduce by half together with the beef stock.

In a little butter sauté the apples, cinnamon, star anise, shallot and raisins until softened, then add in the rice and white wine and bring to the boil.

Add the apple juice, bay leaf and chicken stock and simmer until the rice is cooked through. Stir in the coriander and a knob of butter, stir well and season. Serve the pork on the apple and cinnamon infused rice with the fresh rocket leaves on.
