Easter bunny truffles

Ingredients
- 8 medjool dates, stones removed
- 100g hobnobs (McVities)
- 40g pistachios (Good Earth)
- 40g walnuts (Good Earth)
- 1 tsp vanilla extract
- 2 bars white chocolate
- 3 tbsp green coloured coconut
- You will also need white sugar paste for the feet and tails and mini chocolate eggs

Method
This is a very simple recipe. Just place the biscuits and the pistachios together to break. Add in the vanilla and medjool dates and pulse to a paste. Form into small balls and freeze for 30 minutes before dipping and coating in the white chocolate. Whilst still wet, stick on the sugar paste feet and tails. Allow to set then serve onto a board sprinkled with the green coconut on top. Place on the bunny truffles and add on mini chocolate eggs.
