Easter Almond Torte

Ingredients

Makes 1 x 20cm torte For the pastry
  • 200g organic plain flour
  • ½ tsp baking powder
  • 60g icing sugar
  • 100g butter
  • Zest of a lemon
  • 1 egg yolk
  • 2-3 tbsp milk
For the filling
  • 40g whole red cherries
  • 25g whole almonds, skins on (Good Earth)
  • 200g pure ground almonds (Good Earth)
  • 150g icing sugar
  • 1 tsp vanilla essence
  • Grated zest of a lemon
  • 2 whole eggs
  • 1 egg white
For the piped almond
  • 200g caster sugar
  • 300g pure ground almonds (Good Earth)
  • Grated zest of a lemon
  • 1 tsp vanilla essence
  • 3 egg whites
  • You will also need a sheet of rice paper

Method

Start this recipe by making the pastry using a food processor. Whizz together the flour, baking powder, icing sugar and butter till the mixture resembles breadcrumbs, then add in the lemon zest, egg yolks and milk and whizz to a pastry. Use immediately and do not allow to sit. Use the pastry to line the base and sides of 1 x 20cm cake tin, 4-5cm high. Divide the equally and sprinkle over the pastry. Next, make the filling by mixing together the icing sugar, ground almonds, vanilla essence, lemon zest, whole eggs and egg whites together in a bowl for a minute or two. Mix in the cherries and almonds and pour the mixture into the prepared cake tin. Bake in the oven at 180`c for roughly 50-60 minutes. Remove from the oven and allow to cool down completely. Next, make the almond covering. Place the sugar, almonds, lemon zest and vanilla essence together in a food processor and blitz together for 1 minute. Add in 4 egg white and blitz for 30 seconds till light and creamy. Check the consistency, if it is too stiff to pipe add in a little more egg white and blitz again. Remove the almond torte from the tin. Lay the rice paper on a clean baking tray and place on the almond torte upside down. Spread a little of the almond mixture on top and flatten with a palette knife. Next, place the remaining mixture into a piping bag fitted with a star nozzle and pipe all over, using any extra to make a nice design on top. Decorate with extra cherries and almonds and bake in the oven at 180`c for approximately 20-25 minutes. When ready, you may also decorate the top with chocolate Easter eggs.

  • qoxra ta’ lumija
  • isfar ta’ bajda
  • 2-3 mgħaref ħalib

Għall-mili

  • 40g ċirasa ħamra sħiħa
  • 25g lewż sħiħ
  • 200g lewż pur mitħun
  • 150g zokkor fin
  • kuċċarina essenza tal-vanilla
  • qoxra ta’ lumija
  • 2 bajdiet sħaħ
  • abjad ta’ bajda

Għad-dekorazzjoni tal-lewż

  • 200g zokkor
  • 300g ewż pur mitħun
  • qoxra ta’ lumija
  • kuċċarina essenza tal-vanilla
  • 3 abjad tal-bajd
  • Ikollok bżonn ukoll folja ‘rice paper’

Method

Ibda din ir-riċetta billi tagħmel l-għaġina fil-food processor. Ħawwad flimkien id-dqiq, baking powder, zokkor u l-butir sakemm it-taħlita tixbah frak tal-ħobż, imbagħad żid il-qoxra tal-lumija, l-isfar tal-bajd u l-ħalib u ħawwad ma’ l-għaġina. Uża immedjatament u tħallijiex toqgħod. Poġġi l-għaġina ġo landa tal-kejk b’dijametru ta’ 20cm, għolja 4-5cm. Imbagħad agħmel il-mili billi tħallat flimkien iz-zokkor, lewż mitħun, essenza tal-vanilla, qoxra tal-lumi, l-bajd sħiħ u l-abjad tal-bajd flimkien fi skutella għal minuta jew tnejn. Żid iċ-ċirasa u l-lewż u ferra t-taħlita fil-landa tal-kejk ippreparata. Aħmi fil-forn f’temperatura ta’ 180°C għal bejn wieħed u ieħor 50-60 minuta. Neħħi mill-forn u ħalliha tibred kompletament. Sussegwentement, għamel il-kisja tal-lewż. Poġġi z-zokkor, il-lewż, il-qoxra tal-lumi u l-essenza tal-vanilla flimkien fi processor u ħallat flimkien għal minuta. Żid 4 abjad tal-bajd u ħawwad għal 30 sekonda sakemm ikun ħafif u kremuż. Iċċekkja l-konsistenza, jekk ikun iebes wisq biex tippajpja, żid ftit iktar abjad tal-bajd u ħawwad mill-ġdid. Neħħi t-torta tal-lewż mill-landa. Poġġi rice paper fuq trej tal-ħami nadif u poġġi fuqha it-torta tal-lewż rasha l’isfel fuqha. Ifrex ftit mit-taħlita tal-lewż fil-wiċċ u iċċatja bil-paletta. Imbagħad, poġġi t-taħlita li jifdal f’borża għall-piping mgħammra b’żennuna tal-istilla u ippajpjah kollu, u tuża iż-żejjed biex tagħmel disinn sabiħ fuq nett. Iddekora biċ-ċirasa u l-lewż żejjed u aħmi fil-forn f’temperatura ta’ 180°C għal madwar 20-25 minuta. Meta tkun lestha, tista’ wkoll iżżejjen il-wiċċ bil-bajd tal-Għid taċ-ċikkulata.
