Dill and mustard potato and apple salad

Ingredients

3 tbsp Garlic mayonnaise (Hellmanns )
150g Greek yogurt
2 tbsp Chopped fresh dill
2 tbsp Dijon mustard (Maille)
Juice ½ lemon
Salt and pepper to taste
1 red onion, finely diced
1 red apple, cored and diced
15 Small jersey potatoes, boiled and halved

Method

Start by making the salad dressing. In a large bowl mix together the mayonnaise, Greek yogurt, dill, mustard, lemon juice and season well with salt and pepper. Add in the diced onion, apple and cooked potato halves and mix together well carefully. Serve dressed with extra dill leaves on top.
