Curried rice with turkey chunks and dried fruits

Serves: 4

Ingredients

  • 200g long grain rice (Chefs Way)
  • 150g cooked diced turkey breast
  • 1 knob butter
  • 2 tsp mild curry
  • 1 glass white wine
  • ½ onion
  • 3 cloves garlic
  • ½ leek
  • 6 dried apricots
  • 6 dried prunes
  • 1 tbsp raisins
  • ½ cup fresh cream (Benna)
  • 4 sage leaves
  • 2 tbsp mango chutney

Method

Dice the onions, chop the garlic and sauté in salted butter together with the curry powder. Slice the leeks in thin slices and toss them in, chop the dried fruit, dice the cooked turkey and sauté with the curry. Pour in the white wine and reduce by half, add the cream and chutney and bring to the boil. Mix in the cooked rice, chopped sage and simmer mixing continuously until the sauce is combined with rice and serve.
