Curried chicken on pumpkin bake

Ingredients
- 2 chicken breasts
- 1 tsp paprika
- 1 chili, finely chopped
- Fresh coriander leaves
- 2 limes
- 1 tsp curry powder
- 1 cup coconut milk (Alpro)
- 1 onion, finely chopped
- 1 leek, finely sliced
- 1 small butternut squash, peeled and chopped
- 1 cup unsweetened coconut milk
- 3 eggs
- 100g grated Parmesan cheese
- 1 tbsp. chopped parsley
- 2 tbsp. olive oil
- 2 tbsp. flaked coconut
Method
Trim the chicken breasts and season with salt, pepper, paprika, chili, fresh coriander and lime juice. Pour in the 1 cup coconut milk and allow to marinate for 30 minutes. When ready, seal the chicken breasts in a hot non-stick pan with a drop of olive oil, pour over the marinating liquid, cover and simmer slowly till chicken is cooked and sauce thickens.
Meanwhile, prepare the pumpkin bake. Sauté the onion and leek with a tbsp. of olive oil. Next add in the pumpkin and continue to cook for a few minutes. Transfer into a greased baking tray. Beat together the eggs, parmesan cheese, parsley and pour over the pumpkin mixture. Sprinkle with coconut flakes and bake at 175°C until set and golden. To serve, cut a wedge of the pumpkin bake and serve with sliced chicken breast in curry sauce on the side.

Ferra’ fuqu l-likwidu tal-immarinar, għatti u ħallih jtektek bil-mod sakemm it-tiġieġ isir u z-zalza tagħqad.
Sadanittant, ipprepara l-qargħa ħamra. Sajjar il-basla u l-kurrat ma’ mgħarfa ta’ żejt taż-żebbuġa. Imbagħad żid il-qargħa u kompli sajjar għal ftit minuti. Ittrasferixxi ġo trej tal-ħami midluk bix-xaħam. Ħabbat flimkien il-bajd, il-ġobon parmiġġjan, it-tursin u ferra’ fuq it-taħlita tal-qargħa ħamra.
