Cream cheese fusilli with walnuts, chili prawns and avocado

Ingredients
- 6 king prawns
- 3 gloves garlic, finely chopped
- 2 shallots, finely chopped
- 1 knob butter
- 1 avocado ready to eat
- 150g cream cheese
- 80g walnuts
- 150g fresh frozen fusilli (Maypole)
- Salt and pepper to season
- 2 tbsp. chopped fresh coriander
Method
Peel the king prawns and dice. Heat the butter in a large pan and sauté together with the finely dices garlic and shallots for a few minutes to cook. Peel the avocado, remove the stone and dice. Blitz together with the cheese and walnuts.
Next, cook the fresh frozen pasta in hot water for 1-2 minutes then add to the pan with the prawns, along with the avocado pesto and fresh coriander. Season well with salt and pepper and serve immediately.

Qaxxar il-gambli kbar u qatta’. Saħħan il-butir f’taġen kbir u qalli flimkien mat-tewm imqatta’ fin u l-basal għal ftit minuti. Qaxxar l-avokado, neħħi l-għadma u qatta’. Ħawwad flimkien mal-ġobon u l-ġewż.
Sussegwentement, sajjar l-għaġin frisk iffriżat fl-ilma sħun għal 1-2 minuti, imbagħad żid mat-taġen bil-gambli kbar, flimkien mal-pesto tal-avokado u l-kosbor frisk. Ħawwar sew bil-melħ u l-bżar u servi immedjatament.
