Corned beef Pulpetti

Ingredients
340g Corned beef
500g Couscous (Tipiak)
1 Small onion
2 Large eggs
1/2tsp Paprika
1/2tsp Oregano
2tbsp Olive oil (Borges)
2tbsp Flour (Lamb brand)
Salt & Pepper to Taste
Method
Cook the couscous as instructed and fluff it up with a fork.
Place it in a large bowl. Break the corned beef and add it to the couscous.
Finely chop the onion and add it to the bowl. Follow with the oregano, paprika, and salt & pepper. Crack the eggs and mix everything until well combined. Dampen your hands to avoid the mix stick in your hands, and form the patties. I used about half a cup measure for each patty. Lightly pass the patties through the flour and gently fry in the olive oil for about 4 minutes per side. If you prefer baking or air-fry them, do not coat them in flour. Instead lightly brush them with some oil and cook at a moderate temperature until nicely browned.
