Chicken minestrone

Ingredients

  • ½ a chicken 
  • 1 chicken bullion
  • 1 carrot
  • 1 onion
  • 2 celery stalks
  • 1 spoon tomato concentrate
  • 1 can tomato pulp
  • 1 zucchini 
  • 200 g chopped pumpkin
  • 100g ‘kusksu’ pasta (Lamb brand)
  • 1 small can borlotti beans
  • 2 spoons chopped parsley
  • Handful of frozen peas
  • Fresh thyme springs
  • 2 Bay leaves
  • 2 spoons extra virgin olive oil (Borges)

Method

Place a deep soup pot over moderate fire, drizzle in the olive oil and cook in the peeled and chopped onion, carrot, zucchini and celery. Stir in the tomato concentrate. Add in the chicken and the herbs. Cover with enough water, add in the tomato pulp, bring to the boil, set to simmer for approx. 30 minutes. Remove the chicken, add in the pumpkin, beans, pasta and peas, allow cooking till soup thickens and pasta is cooked. 

Meanwhile pull the chicken meat and add to the soup together with the parsley.
