Cheesy chicken and guacamole quesadillas sandwiches

Ingredients
- 2 chicken breasts, roasted and pulled
- 2 tomatoes, deseeded and diced
- 1 red onion, sliced
- 200g tin sweetcorn, drained
- 1 packet sliced Cheddar cheese (Fior di Vita)
- 2 ready to eat avocados, peeled and sliced
- Few fresh coriander leaves
- 1 jar marinated jalapenos (Santa Maria)
- 2 extra large tortilla wraps (Arinna)
- 2 limes
- 1 x 150ml tub fresh cream (Benna)
- You will also need a few salad leaves for serving
Method
This is an easy snack to prepare. Start by mixing together the fresh cream and the juice of 1 lime to make sour cream. Mix in some chopped fresh coriander and place into the fridge. Next, lay out your large wraps and make a slit in both from the center down. Cover ¼ of each with pulled chicken and top with cheese slices, another ¼ with diced tomatoes, onions, sweet corn and more cheese slices, another ¼ with avocado slices and fresh coriander leaves. Next, fold the remaining ¼ with nothing on top of the avocado. Fold this again over the tomato section, finally fold this over the pulled chicken ¼. Drizzle with a little olive oil and heat through in the oven for a few minutes to melt the cheese. Serve immediately with salad leaves on the side and the prepared sour cream.
