Cheesy baked pasta with tuna and spicy tortilla crust

Ingredients
For the cheese sauce
- 50g butter (Lakeland)
- 50g plain flour
- Salt and pepper
- Pinch cayenne pepper
- 800ml milk (Benna)
- 250g strong Cheddar, grated (Emborg)
You will also need
- 3 tins tuna in oil (Blue angel)
- 1 large can sweetcorn, drained
- 1 red pepper, deseeded and diced
- 2 tomatoes, deseeded and diced
- 60g sliced green olives (Camel Brand)
- 1/2 bag spicy tortilla chips (Santa Maria)
- Extra grated Cheddar cheese
- 500g rigatoni pasta, half cooked (Loaded Pantry)
- 2tbsp chopped jalapenos (Santa Maria)
Method
Start this recipe by making the cheese sauce. Melt the butter in a pan and mix in the flour and cayenne pepper to form a roux. Season with salt and pepper and mix in the hot milk. Stir in the grated cheese and bring to the boil. Remove off the heat. Add the cheese sauce to the cooked pasta and mix together well. Mix in the sweet corn, red pepper, diced tomatoes and jalapenos. Spoon into a large greased oven dish . Crumble over the tortilla chips, sprinkle over the extra grated cheese and bake in the oven at 200`c for 20 minutes.
