Carrot and walnut cake with orange and passion fruit frosting

Ingredients
For the cake
- 3 large carrots, grated
- 200ml mayonnaise (Hellmann’s Real Mayonnaise )
- 175g self-raising flour
- 115g wholemeal flour
- 2 tsp bicarbonate of soda
- 350g caster sugar
- 4 eggs
- 100g walnuts, roughly chopped
- 2 tsp cinnamon
For the frosting
- 175g cream cheese
- Zest of an orange
- 1 passion fruit
- 1-2 tbsp icing sugar
Method
Start this recipe by pre-heating the oven to 170°C. Place all cake ingredients in a mixing bowl and beat together until well mixed. Spoon the mixture into a greased and lined 22cm round cake tin and bake in the oven for 35 minutes, or until cooked through. Meanwhile, make the frosting by mixing all the ingredients together lightly. Place the mixture in the fridge to firm up while the carrot cake cooks. When the cake is cooked, remove from the oven and allow to cool down completely in the tin. Next, place the carrot cake on a serving dish and spread over the orange and passion fruit frosting.
