Cannelloni cannoli

Ingredients

Shell:
1pkt Cannelloni
2tbsp Honey
2tsp Cinnamon powder
2tsp Caster sugar (Lamb brand)

Filling:
1tub  Double cream (Elmlea)
50g Icing sugar
1/4tsp Vanilla essence
150g Pure ground almond (Lamb brand)

Roasted unsalted pistachios (Lamb brand)

Method

Boil the cannelloni 3/4 of the normal cooking time. Do not salt the water.Remove from the water and let them dry well. Bake them in the oven or air-fryer for about 10 minutes until they start to take a nice brown colour. Make sure they hold the shape. Mix the cinnamon with the sugar. Brush some honey on the cannoli and pass them through the cinnamon mixture. For the filling, whip up the cream with the icing sugar and vanilla essence then gently fold the pure ground almonds.
Fill the cannoli with a piping bag. Crush the pistachios and dip the ends of the cannoli into it.Refrigerate for at least an hour before serving.
