Black olive and sundried tomato frittata with tuna and fresh herbs

Ingredients

  • 2 packets low carb pasta noodles, drained (Slim Pasta)
  • 3 eggs, beaten
  • 1 spring onion, finely sliced
  • 2 tbsp chopped black kalamata olives
  • 1 tbsp chopped sun-dried tomatoes
  • 1 tin tuna, drained (3 leaves)
  • 1 tbsp grated Parmesan cheese
  • 2 tbsp chopped fresh mint and basil
  • Salt and pepper
  • 1 tbsp olive oil for frying (Borges)

Method

Place all the ingredients into a large bowl, season well with salt and pepper and mix together. Heat the oil in a frying pan, tip in the mixture and cook for 3-4 minutes on each side until golden brown. Can be served either hot or cold.
