Bigilla and peppered goat cheese fingers with a minted cucumber dip
Serves: 2
Ingredients
- 3 gluten-free focaccia (Dr. Schar)
- 1 peppered goat cheese (Benna)
- 4 tbsp bigilla (Camel Brand)
- 100g gluten-free corn flakes (Dr. Schar)
- 100g gluten-free breadcrumbs (Dr. Schar)
- 2 eggs
- 80g gluten-free flour *
- 150g Greek yogurt Mevgal)
- 2 tbsp grated cucumber
- 1 tbsp chopped mint leaves
Method
Cut the foccacia lengthwise and spread with the bigilla, grate the goat cheese on the bigilla and close again with the top part of the bread. In a bowl Beat the egg and flour, meanwhile blend the cornflakes to mix with the breadcrumbs. Cut the focaccia in fingers and pass first in the egg mixture than into the bread crumbs and fry or grill. In a bowl mix well the yogurt, cucumber and mint to serve on the side as a dip.
