Bigilla and feta tart with lime yogurt and carrot waffers

Serves: 2

Ingredients

  • 2 short crust pasty tartlets
  • 2 eggs
  • 80g feta cheese (Mevgal)
  • 80g bigilla (Camel Brand)
  • 1 tbsp Parmesan cheese
  • 50g plain yogurt (Benna)
  • 1/2 lime
  • Small bunch spinach
  • 1/2 leek
  • 4 dried figs
  • 1 tsp sugar
  • 1 large carrot

Method

Crush the feta in both pre half cooked tartlets and divide the bigilla between both. Beat the eggs and whisk in the parmesan than pour in the tartlets and bake at 180`c until browned from the top. Zest the lime and squeeze the lime and mix in with the yogurt, leave in the fridge until serving time. Sauté the figs cut in half’s in butter and add the sugar to caramelize. Add the shredded leek and toss until softened, now mix in the spinach leaves and season. Using a peeler make thin carrot wafers, deep fry them until crispy and than put them on a kitchen towel to absolve extra fat, use to garnish.
