Beer cooked rabbit with tagliatelle

Ingredients
- 1kg fresh rabbit (cut in pieces)
- 150g plain Flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 3 tsp olive oil
- 2 large onions
- 10 cloves garlic
- 200g smoked Maltese sausage
- 200g button mushrooms
- 1 tsp thyme
- 3 bay leaves
- 2 cans lager or beer
- 300ml chicken or vegetable stock
- 400g fresh frozen tagliatelle (Maypole)
Method
In a small bowl mix together flour, salt, pepper, garlic powder and paprika. Coat the rabbit pieces with the flour mixture and brown in batches in a large deep pan with using 2 tbsp. olive oil. Remove the browned rabbit and add in the onions and sauté for 5 minutes. Next, add the whole garlic cloves, Maltese sausage, mushrooms and thyme. Stir well, season with salt and pepper and cook gently fry for 5 minutes. Add in the lager or beer, bay leaves, stock and rabbit and bring to the boil. Lower the heat, cover and simmer for at least 1 ½ hours. When ready, cook the fresh tagliatelle pasta in boiling water for just 2 minutes and serve with the rabbit stew.
