Baked Maltese rice

Ingredients

  • 300g boiled long grain rice (Riso Scotti)
  • 1 finely slice onion
  • 2 cloves crushed garlic
  • 1 Maltese sausage
  • 2 thick slices streaky bacon
  • 1 zucchini finely diced
  • 100g mushrooms
  • 1 tsp tomato paste
  • 1 tsp curry powder
  • 2 tbsp ricotta
  • 2 tbsp grated cheese
  • 4 eggs
  • Olive oil
  • Tomato sauce
  • Chopped parsley

Method

Heat the oil in a large frying pan, quickly cook the onion and garlic. Add the sausage mince and bacon and cook for a few minutes. Stir in the rice, zucchini, mushrooms, curry powder and tomato paste. Fry all the ingredients together for a few minutes, allowing the ingredients to amalgamate. Push the rice to the side of the pan, beat 2 eggs and whisk in the frying pan to quick fry. Mix the rice back into the egg and mix well. Shallow fry the remaining 2 eggs. Spoon the rice into a ring in the centre of a plate. Sprinkle with the grated cheese, place a spoon of ricotta on top and a fried egg. Spoon some tomato sauce on the side.
