Baked brie with whiskey, dried fruits and pecan nuts

Ingredients
- 1 brie cheese wheel (President)
- 1 tbsp butter (President)
- 2 tbsp brown sugar
- Handful mixed dried fruits chopped – apricots, figs, dates
- Handful chopped pecan nuts, toasted
- 1 tot whiskey
- Thyme springs
- Crushed black pepper
- Sea salt flakes
- Cracker biscuits
- 1 granny smith apple
- 1 carrot peeled and cut in sticks
Method
Take the cheese and put in the centre of a baking paper; with the aid of a sharp knife, cut slits into the cheese, sprinkle with salt, pepper and thyme springs. Bake the cheese in a hot oven for 10 to 15 minutes until cheese melts. Meanwhile prepare sauce, melt butter and brown sugar over moderate heat, add whiskey and stir and simmer until sauce thickens. Remove from heat, add in fruits and pecans. Pour over hot melted cheese and serve with apple wedges, carrots and cracker biscuits.
